One Rotisserie Chicken, Multiple Meals—Magic Rotel Mixture
Alright mommas, this is the post. The one that ties everything together. If you've been following along with the quesadillas or the Southwest Mac & Cheese, this is the base recipe — the magic mixture that started it all.
This is pantry pull magic at its finest: one rotisserie chicken, a handful of pantry staples, and suddenly you've got the foundation for an entire week of meals. Real talk — this is how this momma stretches groceries and makes something out of nothing.
Step one: the chicken. Grab your favorite rotisserie chicken — any flavor, any store, whatever's on sale. First thing I do is let my kids pick at the dark meat and wings... those bone-in pieces are best enjoyed fresh anyway. You can make or buy sides with that and call it meal #1 of this rotisserie stretch. Take the rest — usually the breast meat — and shred it up. (See my handy shredding tool) If you're not making everything today, this is a great stopping point. Refrigerate or freeze that shredded chicken until you're ready.
Step two: the magic mixture. In a small blender, combine chopped onions and bell peppers (fresh or frozen — whatever you've got works), and a can of Rotel. Blend it all up — this is also how we sneak those veggies past picky little eyes, just saying.
Pour that blended mixture right in with your shredded chicken in a pot over medium heat. Season it up with your favorite seasonings and minced garlic, taco seasoning and a touch of chipotle or adobo for a smoky little kick. Let everything come to a simmer, and just take a second to enjoy how good your kitchen smells. You earned that.
And that's it. That's the magic.
This one little mixture can become:
Shredded chicken quesadillas
Southwest-style Mac & Cheese
Tacos
Spooned over white rice
Or literally anything your heart (or tummy) desires
