Chicken Fajita Baked Potato Recipe

Listen, these are NOT your grandma's baked potatoes. Let's Talk About That Chicken

If you've got the time and mental capacity to plan ahead — and let's be real, sometimes we do and sometimes we absolutely do not — season and marinate your chicken breasts a few hours ahead or even the night before. We're talking fajita or taco seasoning, garlic and onion powder, Cajun seasoning, a few splashes of lime juice, and a little Worcestershire sauce. Let all of that soak in and do its thing.

But if today is not that day? No worries, momma. It's like that sometimes and this recipe still delivers. Season right before cooking and keep it moving.

Now, The Potatoes (The Sanity-Saving Way)

You can absolutely bake your potatoes in the oven the traditional way or in the air fyer if you've got the time ORRR you can do what I do and take the shortcut that honestly works just as well — the microwave. Place your potatoes on a microwave-safe plate, poke them all over with a knife a few times each, and microwave in 5-minute intervals until they're soft all the way through.

Grocery store tip: most stores sell individual large baking potatoes separately for cheap, so you can grab exactly what you need. I usually buy one per person plus one extra — because somebody's always hungrier than expected and momma comes prepared. 😄

Building the Fajita Filling

While your potatoes are going, heat a skillet or saucepan to medium-high heat with a drizzle of oil — any kind you've got works. Cook your seasoned chicken until done, then add in your minced garlic and sliced onions and peppers. Feeling fancy? Chop your own. Not today? Grab the frozen pre-chopped bag and let's go. Cook everything together for a few minutes until those veggies are softened and your kitchen smells absolutely incredible.

Taste and re-season your chicken and veggies as you go — don't be shy with it. And here's the pro tip that takes the whole thing to another level: if you've got fresh limes, slice them in half and lay them flat side down right in the hot pan for a few minutes. Those grilled limes squeezed over the top at the end are a total game changer. You'll never skip this step again.

Once everything is cooked and ready, slice each potato right down the middle and score the inside with a knife so all the good stuff can get down into the cracks — this step matters, don't skip it! Then start loading:
