Quesadillas Recipe with Shredded Rotisserie Chicken
If you've been following along, you already know I can stretch one rotisserie chicken into what feels like a week's worth of meals. Made the soup? Good. Now let's talk about round two — because these quesadillas are about to become a weekly staple in your house just like they are in mine.
This one is quick, kid-approved, and has a little secret that makes it taste like anything but a leftover. We're blending the Rotel, peppers, and onion together before it ever hits the pot — yes, hiding the veggies from the kids, and no, I'm not sorry about it. What they don't know won't hurt them, and what they do know is that these quesadillas are their favorite. 😏
The filling is everything. That blended Rotel, bell pepper, and onion mixture gets poured right in with your shredded chicken on medium heat, seasoned up with taco seasoning and just a touch of chipotle or adobo for that smoky little kick. Let it come to a simmer and just smell your kitchen for a minute. You deserve that.

Now for assembly — warm your tortillas first, either in a dry pan or a quick microwave zap to make them pliable and easy to work with. Then comes my "secret" quesadilla sauce... it's giving Taco Bell vibes and I will not apologize for that either. Slather a heaping spoonful on your tortilla, pile on a few spoonfuls of that smoky chicken mixture, and hit it with a generous handful of shredded cheese. Fold or top, your call.
Into the dry pan it goes on medium heat — a few minutes on each side until you get that golden, crispy outside we're all here for. And listen — if some of that filling spills out onto the pan and starts sizzling? Leave. It. Alone. That's the good stuff, and you're going to want to scrape every bit of it up.
Cut in half, dip in more sauce, and try not to eat the whole batch before the kids get to the table.
